Nel 1992 con la Carta Etica e di Qualità vengono messi per iscritto tutti i metodi e i principi difesi dalla Maison. I vigneti Bollinger soddisfano il 70% del fabbisogno in uve, si estendono su una superficie entro i confini dei Grands Crus e Premiers Crus Champenois, e garantiscono una qualità costante nel tempo. Il restante 30% proviene da uve selezionate e acquistate dagli altri viticoltori entro il perimetro dei Grands e dei Premiers Crus. Lo stile Bollinger si basa sul pinot nero, proveniente da A , Bouzy e Verzenay. La sua tipicità conferisce ai vini ricchezza, vinosità e rotondità.

VITIGNO

70% di Pinot Noir, 30% di Chardonnay. 14 crus, di cui l91% di Grands Crus e il 9% di Premiers Crus.

VINIFICAZIONE

Un tempo di maturazione estremamente lungo, più di quattro volte superiore a quello stabilito dalle regole della Denominazione, in modo da trasformare gli aromi allinfinito: una vera e propria alchimia del vino. La maturazione avviene in bottiglia con tappo di sughero.

COLORE

Una veste dai riflessi dorati intensi.

PROFUMO

Un naso complesso dagli aromi di miele e brioche. Compaiono poi le spezie, svelate sotto molteplici evocazioni (zenzero, cumino, carvi, ) prima di evolvere verso note di prugna mirabella, albicocca secca e nocciola fresca.

ABBINAMENTI

Piatti a base di zafferano: scampo alla vinaigrette allo zafferano - Filetto di halibut in crosta di zafferano - Pollastra di Bresse alla salsa allo zafferano e zenzero.

SAPORE

Un attacco vivace ed energico, che rivela note di susina bianca, noce e anice nonché una bella freschezza e unincredibile tensione in bocca.

Il locale occupa le cantine dell'antico Rivellino, la torre di guardia della Rocca, recuperata dalla famiglia Quarneti nel 1987 e location ideale per gli amanti del bere e del mangiare di qualità. Una selezione dei vini al calice ed in bottiglia che trova perfetto abbinamento con un ristorante attento alla selezione delle materie prime, che segue la tipicità e la stagionalità dei prodotti del territorio. La carta delle birre è diventata una concreta alternativa. Le paste fatte a mano, il tartufo , i funghi, la Mora Romagnola ed il Vitellone Bianco dell'Appennino Centrale sono le nostre specialità. Inoltre su richiesta, con almeno 3 o 4 giorni di preavviso, riusciamo ad organizzare menu a base di pesce e proposte banqueting fino a 30/35 persone.
